What makes Swiss Cheese unique

Back in the day, in late spring / early summer, farmers brought their cows from the lower grazing lands up to the lush pastures in the mountains. The cows were adorned with elaborate floral headdresses and decorated cowbells. These decorative elements symbolise the abundance and vitality of the alpine flora, as well as the gratitude of the farmers for the upcoming season. In the fall, the cows were brought down to lower altitudes where the temperature was not as cold. In certain regions, this tradition is still alive.

Until the 19th century, cheese was only made in summer up the mountain in small huts. It was a way to preserve the milk for the cold winter months when the cows used to be “dry” (don’t give milk) and only little vegetables were growing. It was and still is an essential part of the Swiss people’s nutrition and reflects the Alpine nation’s rich cultural and agricultural heritage.
